FlatOut Ultimate Carnage

When the original FlatOut arrived for the original Xbox, it was a racing game that featured dirt-kicking races that often ended up with cars getting trashed to the point that a high impact can cause the driver to comically (and creepily) fly out the vehicle, body limbs flailing like a rag doll before landing in a pasture.
